Coffee Butter Cake

Today I made an attempt on Coffee Butter Cake, recipe given to me by my colleague....Quite easy, only took about 20 mins to prepare and baking time 45 mins... Nice for those who likes coffee :)

Ingredients :
(A)
275 g Margarine
180 g Sugar
230 g Flour
1 tsp Baking Powder
2 tbsps Coffee Paste (i made using two packets of OLD TOWN WHITE COFFEE POWDER without sugar)
(B)
5 Eggs
(C)
60g Nibbed Almonds
Methods:
1. Cream (A) till well blended
2. Add (B) slowly and cream till light and smooth - about 4-5 mins at mid speed
3. Pour mixture into 10" round mold, sprinkle the nibbed almonds on top.
4. Bake at 180c for 45 mins.
Tips:
Do not over cream - will cause cake to sink and coarse texture
Under creaming produces stiff and hard cake....
(funny tips rite?!...cannot over and cannot under cream.....but as long as mixture is well blend, I think its ok... )

Musik Garten :)

Last Saturday, I brought Bryan for a trial class for Musik Garten class and he loves it!!! I definately would recommend to anyone whom belives in music for children... :)

Although the first time, Bryan bravely stood in front of everyone, mumbled alot and danced too! I enjoyed every minute during the class, just as much as Bryan did. Playing with the musical instruments is fun, also Bryan learnt to follow simple instructions from the teacher...very good for listening skills. Nevertheless, its a good exposure for him to mix around....i'm glad i found musik garten!

Steam Layer Cake

Today I managed to try the recipe for making Steam Layer Cake given to me by Jasline (http://jas-lim.blogspot.com/).

I halved the recipe so that its a smaller cake (enough for family of 3). However, after tasting the cake, I have decided to make small changes to the recipe as I find the cake too sweet and too oily...

Steam Layer Cake (ala Hedy's Style)
Ingredients :
2 eggs
90 g sugar
120 g milk
Vanilla Essense / Flavouring - 2 drops
50g butter
8g Double Action Baking Powder
80 gm Multipurpose Flour + 70 gm Marie Biscuit - crushed
7 g cocoa powder

Directions :
1. Beat eggs, and add sugar. Beat until sugar disolves.
2. Add milk and vanilla essense. Mix until mixture is well balanced.
3. Slowly add in the mixture of flour and marie biscuit. While mixing, keep stiring the mixture.
4. Mix well, then add butter. Stir and mix well again.
5. Scoop up 1/3 of the batter into another bowl, and add cocoa powder. You have now 2 type of batter, the plain batter (2/3) and cocoa batter (1/3)
6. Wipe a thin layer of butter on the pan to greese it a little.
7. Lay first layer of the plain batter into the pan, and steam for about 8-10 mins.
8. Prick about 7 on the steamed layer, then add cocoa batter. Steam for about 8-10 mins
9. Prick about 8 on the steamed layers, then add the plain batter again. Steam for about 8-10 mins.

See my results.... heheh....

I have finally managed to translate the recipe given to me from Chinese to English.

Items to Prepare
Glass Jar: Wash, Rinse with hot water, drain dry – preferably under the sun.
Fruits condition – Half-ripe fruits.
Green Lemon – Peel off skin, and cut into slices.
Rock sugar – MUST BE BROWN ROCK SUGAR, in packets

Methods:

1. To layer in glass jar, first layer fruits, second layer green lemon, third layer rock sugar/pure honey. Repeat the order of the layering, until last layer to be rock sugar before sealing the glass jar tightly. Proportion of fruits must be higher than the other two.

2. The fruits will start fermentation in 3 to 4 days, upon up the jar and stir the even the contents.

3. If enzyme is too sweet or too sour, adjust by adding more rock sugar / fruits.

4. During the process of fermentation, once in a while, shake the glass jar to ensure balanced fermentation.

5. Fermentation process will complete in 2 weeks time. Strain out the enzyme and store in refrigerator. To ensure its freshness, the enzyme is best consumed between 2 weeks to 1 month time.

6. When preparing the ingredients for enzyme, make sure it is free of water and oil.

7. By the third day of fermentation process, some white bubbles will be visible. This is normal during the process of fermentation, and it is a sign that the fermentation is successful.
