I halved the recipe so that its a smaller cake (enough for family of 3). However,after tasting the cake, I have decided to make small changes to the recipe as I find the cake too sweet and too oily...
Steam Layer Cake (ala Hedy's Style)
Ingredients :
2 eggs
90 g sugar
120 g milk
Vanilla Essense / Flavouring - 2 drops
50g butter
8g Double Action Baking Powder
80 gm Multipurpose Flour + 70 gm Marie Biscuit - crushed
7 g cocoa powder
Directions :
1. Beat eggs, and add sugar. Beat until sugar disolves.
2. Add milk and vanilla essense. Mix until mixture is well balanced.
3. Slowly add in the mixture of flour and marie biscuit. While mixing, keep stiring the mixture.
4. Mix well, then add butter. Stir and mix well again.
5. Scoop up 1/3 of the batter into another bowl, and add cocoa powder. You have now 2 type of batter, the plain batter (2/3) and cocoa batter (1/3)
6. Wipe a thin layer of butter on the pan to greese it a little.
7. Lay first layer of the plain batter into the pan, and steam for about 8-10 mins.
8. Prick about 7 on the steamed layer, then add cocoa batter. Steam for about 8-10 mins
9. Prick about 8 on the steamed layers, then add the plain batter again. Steam for about 8-10 mins.

I also find it too sweet with the original recipe, so mine :
5 eggs,
200g sugar
300 ml of milk,
butter: estimated, but not as much as 160g, lesser.
the rest, follow suit.

for the first cake, everything ok, just that its too sweet and oily.
I tried again yesterday, i found out that some part of the layer not well cook...I think i steamed it long enuf, but dunno wats wrong...maybe try again next weekend.
Most of the time i steam were 15 mins regardless more or less quantity, seems quite ok, use high fire?
make some for your mum if she goes to KL, i think she trying to make but dont know ok or not.
